i ate a bunch of fennel at lunch today and it gave me a lingering, slightly sweet flavor - a bit minty and licorice-y… i also felt like it got more oxygen to my brain because i was delightfully lightheaded for an hour or so afterwards… sort of swimming on all that delicate crunch.
